Fall is here and our weather can’t commit to sunny and 70 or cold and rainy! This tasty soup is EASY PEASY and perfect for a chilly night.
WARM & COZY CROCKPOT SOUP WITH A KICK
2 cups organic pumpkin (organic canned pumpkin or fresh both work great!)
1 cup organic lipstick peppers
3 organic carrots with the skin
1 organic sweet yellow onion
2 organic leeks
2-4 cloves organic garlic
2 tbs coconut oil or extra virgin olive oil
1 tsp organic cayenne pepper
3 cups organic turkey bone broth or organic veggie broth (cal fresh sells both premade)
3 sprigs of fresh organic thyme
2 tbs fresh organic rosemary
2 cups organic chard
1 tsp organic sage powder
½ tsp organic nutmeg
1 tsp Himalayan salt
Optional: organic meat of choice OR 3 cups organic sprouted lentils.
HOW TO MAKE: Dice all vegetables and herbs. Wash meat or lentils thoroughly. Place the meat or lentils in the crockpot first, then add all other ingredients. Turn crockpot to low and cook for 6-8 hours. ENJOY!
Helpful Tip: If using fresh pumpkin, cut in half and bake in the oven at 350 degrees, for one hour. Once done scrape the flesh out with a fork and place in crockpot.
On chilly and long work days this soup does the trick!
