ENERGY BALL RECIPE

NK Date Balls

Let’s face it! Sometimes we just DO NOT have enough time to prepare EVERY single snack or meal. Having a few “go to” snacks that you can make in large quantities is VERY helpful. Preparing meals/snacks in advance, when you do have the time, is a great way to ensure you always have healthy options on hand for those crazy busy days.

One of my favorite snacks to make is Energy Balls. Why? They are pretty quick to make, you can make A LOT at a time (because they freeze GREAT), and you can pack them with TONS of great nutrients!

Below is one of my favorite recipes. I hope you enjoy!

Energy Balls:

  • 1 cup organic medjool dates (soak them first in warm water for about 30 minutes to soften)
  • 2 tbs organic cinnamon
  • 1 cup raw walnuts (please soak them first for 4 hours)
  • 2 tbs cold-pressed organic coconut oil
  • 2 tbs fresh lemon juice
  • 2 tbs 100% pure vanilla extract
  • ¼ cup chia seeds
  • ¼ cup organic dried cherries (make sure the ingredients state “dried organic cherries” and nothing else)
  • 2 tbs spirulina
  • 2 tbs raw cacao powder (not cocoa powder, must be CACAO powder)
  • ¼ cup raw cacao nibs
  • ½ cup raw almond meal

OPTIONAL:  a clean source of additional protein (I use my homemade egg and plant protein).

INSTRUCTIONS: Drain the dates from soaking and remove their seed. Place them in your blender with the coconut oil, vanilla extract and lemon juice. Blend until a creamy consistency is formed. Place that mixture in a large mixing bowl. Add in all the other ingredients. Mix the batter until all the ingredients are well blended (I use my kitchen aid mixer and turn it on for a few minutes until done). Once mixture is ready, form the dough into one inch balls and place them in the refrigerator. They will be ready to eat in about an hour or so once the balls have hardened. These balls will last in the refrigerator for a few weeks and freeze GREAT for several months. OPTIONAL: Roll each ball with unsweetened shredded coconut, fresh dried spearmint or raw sesame seeds. Feel free to be creative. They are pretty much tasty with anything!
