HOT SPINACH DIP

     ½ cup organic raw sprouted cashews 

      ½ cup filtered water

      1 tbs coconut oil

      1 cup organic sweet white onion

      3-5 organic garlic cloves

      ¼ cup organic leeks

      1 tbs raw miso

      3 tbs organic lemon juice

      5 cups packed organic spinach

      ½ cup organic artichoke hearts

      1 tbs nutritional yeast

 

HOW TO MAKE: First place cashews, lemon juice and miso in a blender. Blend until all ingredients are mixed well. Sauté all other ingredients until the onions, spinach, artichoke hearts and garlic are tender. Once sautéed ingredients are cooked, place in the blender with the cashews, lemon juice and miso. Blend until smooth and creamy. If you want additional protein add some organic hemp seeds for garnish. DELICIOUS!
