EATING HEALTHY DURING THE HOLIDAYS

      Let’s start the New Year with a bang and KICKOFF 2015 in great health! When it comes to eating healthy during the holidays I know firsthand how challenging and downright discouraging this time of year is for our health goals! The single most important thing to remember is why you CHOOSE to eat healthy. Just because your friends, family or colleagues are eating unhealthy doesn’t mean you have to. You work INCREDIBLY hard all year long, so why let a few back to back holidays take over and diminish all your hard work and dedicated efforts! This year instead of telling yourself “I can’t have” something or having an entire cheat day or two, make some delicious and health conscientious treats that you LOVE and look forward to! It is better to eat a lot of REAL, WHOLE FOOD treats, filled with body boosting nutrients, than a few bad food treats! What helps me resist all the unhealthy, and very tempting sneaky treats is having a few yummy healthy homemade treats that I carry around with me. So, when the temptation arises to take a bite of the bad treats, I have some delicious treats on hand at all times!  That way I am not depriving myself of anything. I am simply choosing to eat the healthier option. To help you with eating healthy during the holidays here are a few of my favorite recipes that help me stay on track:

Peppermint Coffee Creamer

1 Can Full Fat Organic Coconut Milk (Trader Joe’s has a great one and at a great price)

1 Whole Vanilla Bean Pod (Slice the center and place entire sliced pod in pan)

1 tsp. Organic Cinnamon

A Bushel of Mint Leaves (100% pure organic peppermints extract works too. Use about 1 tsp. or so)

Pour all the ingredients into a sauce pan and bring to a slight boil. Once boiling, reduce the heat and let steep for 20-25 minutes. Then pour the ingredients through a strainer. Take the mint leaves and squeeze all the remaining juice from them into your creamer jar. If you like a stronger mint flavor place some of the mint leaves in the creamer jar too. VOILA! You have a delicious HEALTHY coffee creamer. (If you want to have a latte you can place the desired amount of creamer in a sauce pan and wisp briskly until it rises.)

Snicker Doodle Christmas Balls

7-10 Dates (soak them for 30 minutes in warm water)

10-15 Dried Figs

2 tbs. Coconut Oil

4 tbs. Raw Cacao

3 tbs. Raw Hemp Seeds

4 tbs. Chia Seeds (these offer a GREAT crunchy flavor)

¾ cup Organic Walnuts (California Fresh and Trader Joe’s have these for great price, if possible soak them for 4 hours first but not mandatory. It’s better for your body to soak nuts prior to consumption)

½ cup Raw Cacao Nibs

3 tbs. Organic Cinnamon

Place soaked dates and figs in your food processor. Processes until both are smooth and creamy. Then slowly add in all the other ingredients and process until all ingredients are mixed. Once mixture is done, take the dough and make one inch balls. Place in the refrigerator for a few hours until they are firm.  (If you want an additional protein source I always add some hard boiled blended egg whites.)
