Summer Love Sweet Potato Salad

  • 4 organic sweet potatoes
  • 1 cup diced organic green onion
  • 1/2 cup finely diced organic celery
  • 1/2 cup finely chopped shallots
  • 3 tbs. fresh organic dill
  • 10 slices organic sugar free bacon
  • 2-3 tbs. Paleo Primal Avocado Mayonnaise 
  • 1 tsp. celtic sea smoked salt
  • 1 tsp. white pepper
  • Optional:  2 tbs. organic dried cherries

How to make: Bake the sweet potatoes until done. While the sweet potatoes are cooking, chop and cook your bacon until its crispy. Dice all other ingredients. Allow sweet potatoes to cool completely before dicing into small cubes. Once they’re cooled combine them with all other ingredients. Refrigerate for 3 hours before consuming.

WARNING:  This salad is AMAZING and super addicting!
