Banana Bread

 Banana Bread Recipe:

  • 1 cup shredded organic zucchini
  • 3 large VERY ripe bananas
  • 1/2 cup coconut milk
  • 1 tsp cacao powder
  • 1/2 tsp fine ground Celtic sea salt
  • 1 tbs organic cinnamon
  • 1 tsp cardamom
  • 1/4 cup almond meal four
  • 1/2 cup sifted coconut flour (important to sift the flour because if not the texture is gritty)
  • 1 tsp Bragg's Raw Apple Cider Vinegar
  • 1 tbs 100% pure vanilla extract (vanilla bean powder is best but pricey and hard to locate in grocery stores)
  • 2 tbs local raw honey
  • 2 pureed organic medjool dates (just smash them very well with a fork if food allergy to dates just replace with 1 more tbs local raw honey)
  • 4 large farm fresh organic eggs
  • 2 tbs melted coconut oil

INSTRUCTIONS: Place all ingredients in a large mixing bowl. Mix until you have a smooth and creamy consistency. Use a parchment paper lined loaf pan. Bake in the oven at 350 degrees for about 45 minutes. The loaf is done when you can stick a tooth pick in the center and it comes out dry. Allow the loaf to set for 30 minutes before cutting.
